how to make cheese with family or friends at a real cheese factory. A day-long experience in the Antigorio Valley to learn how to make cheese in a real dairy - with an attached farm! We will learn what curd is and how it is made, go into the barn to meet the goats and sheep, and make our own cheese that we will take home as a tasty memento of the experience. In the morning: Meet at the dairy and be welcomed by the staff. (10:30 am) Small briefing of the day, handover of materials and start of activities Introductory explanation of the first stages of milk processing during which you will witness live curd preparation. Explanation of history Antica Latteria Turnaria and explanation of the restored dairy rooms (laboratory and aging) and the use of ancient tools. Return to the laboratory to watch curd breaking and the first stages of cheese breaking Laboratory moment with independent preparation of first-salt cheese molds Tasting lunch inside the cheese factory Menu: Cheese samples (Fresh and aged cow's milk cheese, Spress (mixed goat's and cow's milk), freshly made Ricotta, Caprino Ossolano (depending on the season) Samples of Ossola cold cuts: Cacciatore di Maiale, Mortadella ossolana, Salame nostrano, Lonzino, Cacciatore di Capra Ossola black bread. In the afternoon: Transfer by car or on foot to the barn, about 600 meters from the dairy. Assistance in grazing the goats and kids born in the year, with the opportunity to get close to the goats for a small milking test. Assistance with corral preparation and playtime with the grazing animals. Return to the dairy to collect the cheese produced, hand out diplomas and opportunity to use the 10 percent discount voucher reserved for participants for purchases in the dairy's commissary.
