This experience will lead you through every stage of our organic winemaking process, culminating in a visit to a true gem of Tuscan tradition: the historic vinsantaia, a rarity to find nowadays.
You will begin with a walk through the Sangiovese vineyard, delving into organic viticulture practices, the characteristics of the terroir, and the Chianti regulations. You will then cross the olive grove, where you will learn about the local olive-growing history and the production methods of extra virgin olive oil.
The tour will continue with a visit to the winery, where you will gain insights into winemaking techniques, aging processes, and enjoy a direct tasting of wine from the barriques. You will also visit our Orciaia, where we store ancient Impruneta jars, and finally the vinsantaia, where the Vinsanto of Chianti comes to life between dried grapes and historical caratelli dating back to the 1960s.
The experience will conclude with a guided tasting of four wines, paired with a selection of local cheeses, cured meats, and crostini with our organic EVO oil.
