The day will begin at the Fontanelle Alpine Pasture, where shepherdess and cheesemaker Elisa Mosca will take you on a tour of the stone-built pasture and the surrounding pastures. You will learn about the animals, particularly the Pezzata Rossa d'Oropa, the queen breed of cattle of the upper Elvo Valley, and discover their importance to the mountain ecosystem. We will then move on to the dairy where we will make toma cheese together, a typical cheese of this valley. You will then visit the characteristic stone cellar where the cheeses are aged, accompanied by a tasting. It is possible to reach the Trappa di Sordevolo just a few minutes' walk away where you can enjoy lunch in this location where time seems to stand still

What to expect

- 9:30 a.m. meet at Km 8 of SP 512 del Tracciolino, just before the "Trappa" sign, where cars are left - 9:45 - 10:00 short uphill walk to reach Alpeggio Fontanelle - 10:00: arrival at the farm and introduction to the place - 10:30-11:30 a.m.: tour of the stone alpine pasture and walk through the neighboring pastures - 11:30-12:30: return to the dairy and production of toma (local cheese) - 12:30 p.m.: visit to the aging cellar and cheese tasting - 13:00-13:30: short walk to the Trappa of Sordevolo - 13:30- 16:00: lunch with local products and visit to the Trappa - 16:00: return to the cars

Nazarena è stata una guida preparata e coinvolgente, oltre che gentile. Elisa ci ha aperto le porte della sua azienda parlandoci dell’allevamento, della produzione dei formaggi e anche delle gioie e difficoltà del vivere e lavorare in montagna. La degustazione dei suoi prodotti ha chiuso magnificamente l’esperienza. Salita alla malga abbastanza facile, noi avevamo un piccolo problema fisico ma siamo riusciti a fare tutto senza problemi, si raccomanda solo l’uso di scarpe adeguate.
