La Trappa di Sordevolo is a former monastery, then alpine pastureland and now an eco-museum, in a valley where the breeding of the Pezzata Rossa d'Oropa cattle has been practised for centuries. We propose an activity dedicated to discovering the traditional techniques of raw milk processing and its main product, Alto Elvo raw milk butter, a Slow Food Presidium. The experience will begin with a welcome from the Scuola Senza Pareti (School Without Walls), an educational project of the Elvo and Serra Valley Ecomuseum, which will introduce the site and lunch, with a simple mountain menu that expresses the territory of the Elvo valley and Biella province. In the afternoon, after a guided tour of the building, there will be a butter-tasting workshop for Valle Elvo butter, in which we will talk about its specificity, the wooden utensils traditionally used, its producers and the difficulties in continuing to produce it. The rehabilitation of traditional building techniques and the regeneration of the terraces, hospitality in the cells that were once the monks' and then the mountain people's, and the rediscovery of an authentic cuisine linked to its landscape make La Trappa a 'school for new inhabitants', where past and future meet. La Trappa offers the possibility of staying overnight at the facility at a cost of 25 euro, which includes breakfast.L’esperienza inizierà con il benvenuto della Scuola Senza Pareti, progetto educativo dell’Ecomuseo Valle Elvo e Serra, che introdurrà al luogo e al pranzo, con un menù semplice di montagna espressione del territorio della Valle Elvo e del Biellese. Nel pomeriggio, dopo la visita guidata all’edificio, si svolgerà il laboratorio di degustazione del burro della Valle Elvo, in cui parleremo della sua specificità, degli utensili in legno tradizionalmente utilizzati, dei suoi produttori e delle difficoltà per continuare a produrlo. A seguire scoprirete l'origine dell'antica Toma Magra. La riabilitazione delle tecniche costruttive tradizionali e la rigenerazione dei terrazzamenti, l’ospitalità nelle celle che furono dei monaci e poi degli alpigiani, la riscoperta di una cucina autentica connessa al suo paesaggio fanno oggi della Trappa una “scuola per nuovi abitanti”, dove passato e futuro si incontrano. La Trappa offre la possibilità di pernottare presso la struttura al costo di 25 euro, quota che comprende la prima colazione.
