La Trappa di Sordevolo is a former monastery, then mountain pasture and now an ecomuseum, in a valley where breeding of the Pezzata Rossa d'Oropa cattle has been practiced for centuries. An activity dedicated to discovering traditional raw milk processing techniques and its main product, Alto Elvo Raw Milk Butter, a Slow Food Presidium, is offered here.
The experience will begin with a welcome to the sordevolo trappa and a tour inside this ancient structure. You will discover curiosities, initiatives and customs of this magical place.
In the afternoon, after a guided tour of the building, there will be a tasting workshop of Elvo Valley butter, in which we will talk about its specificity, the wooden utensils traditionally used, its producers and the difficulties of continuing to produce it. This will be followed by discovering the origin of the ancient Toma Magra, which you will be able to taste at snack time.
La Trappa offers the possibility to stay overnight at the facility at a cost of (25€), a fee that includes breakfast. It is also possible to book lunch at an agreed price (25€) before arriving.
